Planted on a gentle slope of well drained grey loamy soils, the fruit from these parcels provides the backbone to one of Victoria's most stately Chardonnay wines. The princely berries translate into a beautifully aromatic bouquet and rich palate, slightly citrus, set against a background of grapefruit, apple and melon flavours all bound together by suggestions of cool climate mineral and French vanilla oak.

St Huberts won much fame in Europe during the latter part of the 1800s, for the extraordinary quality of their new world wine. In the twentieth century, this noble estate lead the Yarra Valley's second golden age. The present day property boasts old vines planted in 1966 which generally yield low crops of intense fruit, brimming with rich flavours. A mere twenty one hectares of vine are crafted into one of Victoria's most enduring Cabernets. A tribute to the quality is the assertion by local growers that these vines produce the best Cabernet Sauvignon in Yarra Valley.

Hubert de Castella's passion for Yarra Valley saw him establish St Huberts in 1862. By the late 1800s it had grown to be the largest winemaking estate, the wines enjoyed immediate success in markets local and abroad. The onset of the Great Depression, the increasing popularity of fortified wine and the emerging profitability of dairy farming saw the vineyard revert to grazing in the 1920s. It wasn't until the 1960s that Yarra Valley again rose to prominence as a wine producing region and St Huberts was once again, one of the leading protagonists.

The Morey family celebrate a tradition of winemaking which spans five centuries along the steep banks of Mosel River. Their 2½ hectare vineyard on the outskirts of Beechworth now yields a quality of fruit which would have done the ancestors proud. The Gamay grape traditionally makes a light bodied fruity wine, its thin skin offers little tannin, for a style which drinks superbly on release. Sorrenberg work to a combination of Burgundy and Beaujolais techniques, producing an even more engaging wine through the inclusion of a soupçon Pinot Noir.

Shiraz is sourced from two estate vineyards at opposite ends of the Heathcote region, the Merindoc property in Tooborac to the south and Willoughby Bridge at Colbinabbin in the north. The vines at Merindoc are grown to gravelly, low fertility ironstone soils which infuse the wine with minerality, structure and cooler clime, slower ripened fruit character. Willoughby Bridge is planted on the precious strip of Cambrian rich red dirt, one of the oldest soil types in Australia, internationally renowned for the production of Heathcote's intensely flavoured Shiraz.

Mondeuse Noir / Werribee / Victoria
The wines of Shadowfax have gone from strength to strength in a very short space of time, due in no small part to the remarkable quality of Werribee fruit. Grapes are all hand picked, transported to the wineworks at Werribee and carefully whole bunch pressed. Juices are filled to a selection of French oak barriques and hogsheads, inoculated by wild indigenous yeasts and fermented to dry. After a term on sedimentery lees in oak, under the expansive and cavernous Shadowfax estate cellars, barrels are racked for assemblage into the final wine.

From the King Valley in Victoria's high country, a good deal of pruning and thinning of Syrah and Dolcetto vines, together with some hand picking and selection of fruit. Cane cutting techniques have shrivelled the berries, concentrating the sugars and bittersweet grape tannins, whilst still on the vine. A wine of explosive Dolcetto characters with flavours akin to the shed dried styles of Italy's Veneto region, De Bortoli have achieved, an exciting fresh red, fully Euro in styling with the emphasis on fruit, suppleness and food friendliness.

Mount Bellarine, on which Scotchmans Hill is located, is an extinct volcano where thick, black, moisture retentive and fertile volcanic soils of black clay with basalt subsoil lend individual and intense flavours to the wines. Chardonnay grapes grown here exhibit penetrating characters of stonefruit and melon with firm acid structures and crisp textures. Scotchmans Hill also retain vineyards in the King Valley where the cooler climes produce a softer, rich style of Chardonnay with vivid expressions of yellow peach, melons and aromatic tropical fruits.
